Overnight oats Swiss style muesli

Ingredients
- 3 tbsp (25g) jumbo porridge oats or toasted rolled oats*
- 1 sachet Energis vanilla drink powder
- ½ tbsp (5 g) mixed seeds
- ½ tbsp (5 g) mixed nuts, chopped finely
- 3 tbsp (30 g) natural yogurt
- 1 green apple, cored and chopped finely**
- Lemon or lime juice
- Juice of 1 orange (about 100 ml) or use water
- Pinch cinnamon (optional)
Toppings:
Fresh fruit like blackberries, pomegranate, sliced pear or kiwi.
Options:
* Substitute a spoonful of the porridge oats for buckwheat flakes or another flaked wholegrain.
** Use only 1/2 the apple in the muesli mix; keep the other half for your topping. Coat the apple in lemon or lime juice to help it keep its colour.
Method
- If you are using rolled oats, an option is to bake them on a tray in a preheated oven at 200o C/180oC for 5 minutes to make them toasty, nutty and fragrant. Let cool.
- Put all ingredients (except topping) in a bowl / container; cover and store in the fridge for a couple of hours or overnight.
- Remove from the fridge and lovingly garnish with your choice of fresh fruit topping.
